As a young child, my parents normally cooked from scratch. Yep, life was pretty simple back then, but as an adult in today’s society, you’re going to always be on the go. As such, nutrition often gets thrown out the window. If it’s not quick or simple to make, then we believe it’s not worth the effort. At that point, in our heads we think, “may as well go to your favorite fast-food restaurant, at least then we wouldn’t have to slave over a stove.”

That is what I did daily. Then before I knew it, I was gaining weight and not able to afford groceries for the house. So, I was faced with a choice. Either put on more weight and not buy groceries or give up on my fast-food lifestyle and start cooking at home. I decided to go with the cheaper option, to cook from scratch.

Even though I hadn’t cooked in a while the skills came back to me pretty easily as I got into the grove. What’s great, is that you can do it to, and that is what this post will aim to help you do. This post will help you on your journey to do the same for yourself by showing you a few easy recipes you can try on your own.

How To Cook From Scratch

Here are some recipes that you can try for yourself:

Low-Carb Sushi

Yield: 3

Total Time: 20 minutes

Prep Time: 10 minutes

Cooking Time: 10 minutes

Ingredients:

  • 16 ounces of cauliflower
  • 6 ounce of softened cream cheese
  • 1-2 tablespoon of Rice Vinegar
  • 1 tablespoon of Soy Sauce
  • 5 sheets of Nori
  • 1 piece of 6-inch cucumber
  • ½ a piece of medium Avocado
  • 5 ounces of smoked salmon

Instructions:

  1. Open up the lid of your blender or food processor and add cauliflower. Pulse them until they turn into rice-sized pieces.
  2. Slice up your cucumber on either side. Stand the cucumber and slice up the sides. Discard the middle part of the cucumber and keep the remaining 2 strips. Keep the cucumbers in your fridge.
  3. Take a skillet and heat some oil over medium heat. Add your cauliflower and cook them well. Season with some soy sauce.
  4. Transfer the cooked cauliflower to a bowl and add rice vinegar and cream cheese. Mix well. Let it chill in your fridge. Slice about ½ of your avocado and scoop out a bit of the flesh. Take your nori sheet down a bamboo roller and cover it up with saran wrap.
  5. Spread out some cauliflower rice over your nori sheets and add in the fillings (cucumber, avocado, smoked salmon, etc.) according to your desire. Roll up the sheets and serve!

Cloud Breads

Yield: 2

Total Time: 20 minutes

Prep Time:  10 minutes

Cooking Time: 10 minutes

Ingredients:

Required for the Cloud Bread:

  • 3 large pieces of eggs
  • 3 ounce of cream cheese
  • 1/8 teaspoon of tartar cream
  • ¼ teaspoon of salt
  • ½ teaspoon of garlic powder

Required for the filling:

  • 1 tablespoon of mayonnaise
  • 1 teaspoon of Sriracha
  • 2 Bacon slices
  • 3 ounces of Chicken
  • 2 pepper jack cheese slices
  • 2 grape tomatoes
  • ¼ of a medium-sized avocado

Instructions:

  1. Pre-heat your oven to a temperature of 300-degree Fahrenheit. Take two clean bowls and separate your 3 eggs (one for whites and one for the yolk). Add tartar cream and salt to the whites. Whip the eggs using a hand mixer until a foamy texture appears.
  2. In the other bowl, add 3 ounces of cream cheese and beat the yolks until a nice pale-yellow texture comes. Fold the white’s mixture into your yolk mixture, half at a time
  3. Take a baking sheet and line it up with parchment paper. Add ¼ cup of your cloud bread batter into six individual rounds.
  4. Take a spatula and gently press the cloud bread to make a square. Sprinkle a bit of garlic powder and bake for about 25 minutes. Take a medium-sized skillet and add your chicken and bacon.
  5. Season with some salt and cook them until a brown texture comes. Take a small bowl and add sriracha and mayonnaise. Spread about 1/3 of the mixture on the underside of your 3 Keto bread.
  6. Add your chicken on top. Add about 2 slices of your pepper jack cheese, 2 halved grape tomatoes, 2 slices of bacon, and just 2 ounces of mashed avocado on top of your sandwich. Season with some salt and pepper and top it up with another bread. Serve!

Chocolate and Peanut Tarts

Yield: 6

Total Time: 40 minutes

Prep Time:  10 minutes

Cooking Time: 30 minutes

Ingredients:

For the Crust:

  • ¼ cup of Flaxseed
  • 2 tablespoons of Almond Flour
  • 1 tablespoon of Erythritol
  • 1 Large Egg White

For the Top Layer:

  • 1 Medium-sized Avocado
  • 4 tablespoons of Cocoa Powder
  • ¼ cup of Erythritol
  • ½ teaspoon of vanilla extract
  • ½ teaspoon of Cinnamon
  • 2 tablespoons of Heavy Cream

Middle Layer:

  • 4 tablespoons of Peanut Butter
  • 2 tablespoons of butter

Instructions:

  1. Preheat our oven to a temperature of 350F. Take a separate bowl and toss in the flaxseed and grind them until they are firmly grounded.
  2. To the flaxseed mix, add up the rest of the ingredients listed under ‘crust’. Take a tart pan and pour down the crust mixture and put it inside the oven and bake it for 8 minutes.
  3. Take another bowl and prepare the top layer by combining all of the ingredients listed under crust and blend them to get a creamy and smooth mixture.
  4. Once the curst inside the oven is complete, take it out and let it cool. For the peanut butter layer, you are going to need to take another bowl and melt the peanut butter and butter mixture in your microwave.
  5. Gently pour down the molten Peanut butter mixture on top of your crust letter and leave it for 30 minutes to settle down.
  6. Over the Peanut Butter layer, pour down the chocolate avocado layer and let the whole tart refrigerate for an hour. Take It out from the fridge and serve them well.

Conclusion

Believe it or not, I don’t like cooking. I hope you caught on to that. It’s funny because friends, and family seem to think that I love to cook. In their defense, I do prepare almost every meal from scratch these days. The truth is, I figured out that cooking from scratch is not only cheaper than eating out, but also way healthier in the long run. So, I choose the smarter option and now, you can too.
