  1. Meat tempering.

Allow a whole chicken to sit for an hour before cooking to allow the meat to reach the room temperature. Individual cuts should sit for 20 minutes. Tempering ensures the chicken cooks evenly.

  1. Fully preheat your oven before cooking.
