Batter

  • Eggs (2)
  • Pepsi (100ml)
  • Siracha (4tsp.)
  • Garlic (12g, chopped)

Seasoned Flour

  • White Pepper (1 tsp)
  • Black Pepper (1 tsp.)
  • Table Salt (2 tsp.)
  • Rice Flour (1 cup)

Vegetables

  • White Mushrooms (3 lbs.)

Directions

Set mushroom to marinate for at least 30 minutes in the batter. Set your air fryer n to 350 degrees F. Combine the flour and spices together. Roll the mushrooms in your flour so that they are evenly coated, then dip the pieces into your batter and back into the flour. Once coated, place your mushrooms in the fryer basket, and allow to cook until golden brown in appearance. Serve and enjoy.

Ingredients

  • Whole milk ricotta (4 oz.)
  • 1/4 c. Fresh basil (chopped)
  • 5 oz. Baby spinach or kale (chopped)
  • 2 medium eggs
  • Italian shredded six-cheese blend (1 oz.)
  • Parmesan (0.5 oz)
  • 3 tbsp. Olive oil
  • 3 oz. Assorted mushrooms
  • 1 small, sweet onion (diced)
  • 1 medium red bell pepper (diced)
  • 1 clove garlic (minced)
  • 1 can fire-roasted tomatoes (diced)
  • 3 no-boil lasagna noodles
  • 5oz. Refrigerated light alfredo sauce
  • Salt
  • Black pepper

Directions:

Preheat the air fryer to 320 °C. In a reasonably sized bowl. Combine ½ Italian, ½ Parmesan cheese, ricotta, basil, and egg. Season the mixture with salt and pepper. In a reasonable size skillet heat 1 tbsp of oil over medium heat. Sauté mushrooms for approximately 7 minutes stirring occasionally and allow to cook until golden. Reheat the skillet adding 1 tbsp oil to sauté ½ onion, garlic, bell pepper, and spinach stirring occasionally for approximately 7 minutes.

In the bowl with mushrooms add remaining onion, tomatoes salt, and pepper to season.

Empty skillet reheats, and use remaining tbsp of oil. Break noodles and base the skillet. Top each layer of noodles with a portion of the ricotta mixture, vegetable, and Alfredo sauce. Ensuring that noodles are layered in opposite directions each time. Sprinkle the top with the remaining cheese. Allow to bake until golden for approximately 15 minutes. Garnish with basil and serve.

Ingredients

  • Mushrooms (300g, Portobello, sliced)
  • Coconut oil (2 tbsp., melted)
  • Salt (1/2 tsp.)
  • Black pepper (1/4 tsp.)

Directions

Set your fryer to 390 degrees F. Toss all your ingredients in a large bowl, and add to your fryer basket in a single layer. Allow to cook for 5 – 7 minutes (your potatoes should be crisp in texture). Serve and enjoy!

Ingredients:

  • Orange (1, peeled, chunked)

  • Squash (1 yellow, cut into half-moons)
  • Red onion (1, sliced)
  • Mushroom (2 oz., brown, halved)
