How to Cook Opah on the Grill?

Grilled Opah with Asparagus

Ingredients 

  • 1/4 cup of butter, melted
  • 4 opah fillets (about 5 ounces each)
  • 1/2 pound asparagus, (trimmed and blanched in salted water for 4 minutes, drained and drizzled with olive oil)
  • 1/2 cup crushed Ritz crackers

Procedure

  1. Heat your grill to medium. Whisk together the melted butter and juice squeezed from the lemon. 
  2. Brush the grill in a shaded area and coat the fillets with the butter marinade. Place the fillets on a tray, skin side down. 
  3. Sprinkle crushed Ritz crackers over each fillet.
  4. Grill each side of the opah fillets for 5 minutes or until light brown.
  5. Remove from heat and serve with asparagus.
  6. For an extra touch, serve your opah with some lemon wedges on the side.

Grilled Opah with Olives   

Ingredients

  • 1/4 cup of butter, melted
  • 1 fresh lemon 
  • 4 opah fillets (about 5 ounces each)
  • 1/2 pound asparagus, (trimmed and blanched in salted water for 4 minutes, drained and drizzled with olive oil
  • 1/2 cup chopped pitted Kalamata olives (or any other pitted black olive you like)

Procedure

  1. In a small bowl, mash the crushed crackers. Combine the butter and juice squeezed from the lemon. 
  2. Brush the grill in a shaded area and coat the fillets with the melted butter marinade. 
  3. Place the fillets on a tray, skin side down. Sprinkle crushed Ritz crackers over each fillet.
  4. After 5 minutes, turn fillets and repeat coating with cracker crumbs on both sides until done and grill marks appear.
  5. Remove from heat, top each fillet with olives; serve with asparagus on top.
  6. Enjoy!

Grilled Opah Steaks with Herb Garlic Butter

Ingredients

  • 1/4 cup of butter, melted
  • 4 opah fillets (about 5 ounces each)4 pieces of herb Garlic butter (1 tablespoon each) for each fillet, divided use.

Procedure

  1. Heat your grill to medium. Whisk together the melted butter and juice squeezed from the lemon. 
  2. Brush the grill in a shaded area and coat the fillets with the butter marinade.
  3. Place the fillets on a tray, skin side down.
  4. Grill each side of the opah fillets for 5 minutes or until light brown.
  5. Remove from heat and top with herb garlic butter.
  6. Enjoy!

How to Cook Opah on the Grill with a Baking Sheet? 

Here is the method is given to cooking the opah on the grill along with a baking sheet:

  1. Remove the prawns from the freezer 30 minutes before cooking. Place them on a baking sheet and place them in the preheated oven at 350° for 10 minutes or until prawns are thawed. The baking sheet helps keep fish from sticking to it during grilling. 
  2. Grate 1/2 a lemon over the opah fillets. 
  3. Remove the fillets from the oven and discard the grated lemon juice. 
  4. Heat your grill and transfer the prawns to another piece of aluminum foil, overlapping each fillet by half and then folding it in half to create a flat and even layer. 
  5. Transfer to grill, close lid, and cook for 10 minutes over medium heat without flipping until dark brown on both sides, turning gently once every 5 minutes or until done. 
  6. Remove from heat, discard any unappetizing bits and slice each fillet with a sharp knife into four pieces. Serve immediately with lemon wedges and asparagus, dusted with lemon juice. 

Note: Grill the fish until the crust is browned to your liking and remove the fillets to a platter to rest while you repeat steps 4, 5, and 6 on the remaining fillets. You can also grill your opah in a baking pan if desired.
