Smashed Potato Salad
This smashed potato salad is the perfect mix between mashed potatoes and potato salad. It goes perfectly with your air fried lamb chops and can be made ahead of time and refrigerated.
Prep Time: 10 mins.
Cook Time: 35 mins.
- Potatoes (3lbs, Yukon gold, quartered, boiled and mashed)
- Eggs (4 hard boiled, sliced)
- Celery (1 stalk, chopped)
- Radishes (6, thinly sliced)
- Sweet Pickle Relish (2 tbsp.)
- Green Onions (3, thinly sliced)
- Miracle Whip Dressing (3/4 cup)
- Vinegar (1 tbsp., white)
- Paprika (1/2 tsp.)
- Add your warm potatoes to a bowl with all your remaining ingredients and mix to fully combine.

- 2 cups water
- 1 tablespoon sugar
