How To Cook Against The Grain Baguette

Recipe #1: Grilled Cheese Pineapple

Serves: 4

Time: 18 mins.

Ingredients:

  • Against the Grain Baguette (1 loaf, cut into 16 slices)
  • Cheddar Cheese (8 slices)
  • Mozzarella Cheese (4 slices)

Pineapple: 

  • pineapple (1)
  • honey (3 tablespoons)
  • lime juice (2 tablespoons)
  • sugar (1/4 cup packed brown)

Dip: 

  • cream cheese (3 ounces, softened)
  • sugar (1 tablespoon brown)
  • lime juice (1 tablespoon)
  • honey (2 tablespoons)
  • yogurt (1/4 cup)
  • lime zest (1 teaspoon grated)

Directions:

  1. Firstly, make 8 wedges using the pineapple then divide each wedge into 2 spears.
  2. Combine spears using lime juice, sugar, and honey; refrigerate for approximately 1 hour.
  3. Combine all dip ingredients into another bowl then set aside.
  4. Evenly divide your cheese and marinated pineapples between your baguette slices then lightly dust with salt and pepper.
  5. Press the “GRILL” function on your electric grill then select the “MED” temperature option. Adjust the timer to 8 minutes then press the “START/STOP.” The electric grill should start to preheat. The grill should start to beep once it is fully preheated.
  6. Once you have heard a beep, arrange the mini sandwiches over the grill grate then close the lid.
  7. Close the lid then cook for approximately 4 minutes, flip the sandwiches and continue to cook for another 4 minutes on the opposite side.
  8. Divide into serving plates. Serve warm with the prepared dip.

Recipe #2: French Toast

French toast is also known by the name “lost bread” because it is usually made of stale or leftover bread slices. Though this recipe uses Against the Grain baguette slices instead of leftover bread, you get the same amazing aroma and an even better flavor.

Serves: 4

Time: 10 minutes

Ingredients:

  • 16 slices Against the Grain Baguette
  • 4 eggs
  • 4 tablespoons sugar
  • ¾ teaspoon cinnamon
  • 2/3 cup milk
  • 1 teaspoon vanilla
  • 1 pinch salt
  • Some butter

Directions:

  1. Heat the skillet over medium-high heat. Grease with butter.
  2. In a shallow dish, whisk the eggs, sugar, cinnamon, milk, vanilla, and salt.
  3. Dip the baguette slices into the egg mixture and shake any excess.
  4. Cook the bread slices on a skillet until golden on both sides.
  5. Serve while still hot. You can dust with powdered sugar and garnish with sliced strawberries.

Recipe #3: Spicy Horseradish Beef and Cheese Panini

This will entice any lover of meat. The horseradish and jalapeno combination give this sandwich some heat balanced perfectly by the cheese.

Time: 26 Minutes

Serves: 4

Ingredients

  • 1/3 cup mayonnaise
  • 1/4 cup crumbled blue cheese
  • 2 teaspoons prepared horseradish
  • 1/8 teaspoon pepper
  • 1 large sweet onion, thinly sliced
  • 1 tablespoon olive oil
  • 16 slices Against the Grain Baguette
  • 8 slices provolone cheese
  • 8 slices deli roast beef
  • 2 tablespoons butter, softened
  • 12 small jalapeno slices

Directions

  1. Combine the mayonnaise, blue cheese, horseradish, and pepper in a bowl.
  2. Sauté the onions in a skillet on medium heat until they become tender.
  3. Spread the blue cheese mixture on a single side of each piece of bread.
  4. Place a layer of cheese, then jalapenos, beef, onions. Follow that with a second layer of cheese on half the pieces of baguette. Place the other slices of bread atop
  5. Butter both top and bottom of the sandwich and cook the Panini on medium heat for 6 minutes, flipping halfway through. The bread should be toasted, and the cheese should be melted.

Recipe #4: Smoked Provolone and Turkey Panini

This simple sandwich has a world of flavor in it. The provolone gives it a nice Smokey flavor which, works well with the spiciness of the Dijon, and the creaminess of the mayonnaise.

Time: 15 Minutes

Servings: 4

Ingredients

  • Cheese Covered Against the Grain Baguette, 16 slices
  • Mayonnaise, 3 tbsp., light
  • Dijon mustard, 2 tsp.
  • Provolone, smoked, 5 oz., thinly sliced
  • turkey breast, smoked, 8 oz., thinly sliced
  • beefsteak tomato, 1 ripe, thinly sliced
  • spinach leaves, 1 oz., baby
  • Olive oil

  Directions

  1. Spread a layer of mayonnaise and a layer of mustard on the inside of the top piece of bread.
  2. Place a layer of turkey on the inside of the bottom piece of bread then, spinach, then tomatoes, and top with cheese.
  3. Close your sandwich with your other slice of bread.
  4. Cook the sandwiches for 6 to 10 minutes on medium heat, and make sure to flip halfway through.
  5. Cut the sandwiches into 4 wedges if you haven’t already done so.

Recipe #5: Apple, Cheddar and Cinnamon Sandwich

This Apple, Cheddar, and Cinnamon-Raisin Sandwich combines those two ingredients with the delicious flavor of cinnamon-raisin bread as well, creating a delightful sandwich that is full of flavor.

 Serves: 1

Time: 10 minutes

Ingredients:

  • 1 loaf of Against the Grain Baguette, sprinkled with cinnamon, sliced in 16 pieces
  • ½ medium granny smith apple, thinly sliced
  • 1 slice of sharp cheddar cheese

Directions:

  1. Start by preheating the breakfast sandwich maker.
  2. While the appliance is preheating, slice half of an apple very thinly.
  3. Slice the baguette as well.
  4. Take the bottom half of each sandwich and place them in the bottom of the sandwich maker.
  5. Remove the cooking plate since you will not need it for this recipe.
  6. Top the baguette pies with the thin slices of apple.
  7. Place the slice of sharp cheddar on top of the apple slices.
  8. Add the top baguette pieces to the top slot.
  9. Cook for 3-4 minutes, ensuring that the cheese is nicely melted.
  10. Open and carefully take the sandwiches out. Enjoy immediately.
