  • Water chestnuts (8 oz, drained and sliced)
  • Peanuts (1/4 cup, chopped)
  • Ramen noodles (2 packs, Oriental flavor, broken)
  • Water (1 ¼ cups)
  • Soy sauce (1/4 cup, light)
  • Cornstarch (1 tablespoon)
  • Chicken (2 cups, cooked and chopped)
  • Bamboo shoots (8 oz., drained)
  • Scallions (1/4 cup, chopped)

Directions

  1. Mix all the ingredients together in a large microwave-safe bowl and place to cook on high for about 4 minutes.

Time: 1 hour & 15 minutes

Ingredients:

  • onion (1, sliced, large)
  • olive oil (1/4 cup)
  • potatoes (2, quartered, large)
  • garlic cloves (4, crushed)
  • tomato paste (1 can)
  • chicken thighs (4-6, firm)
  • lemon (1, juice only)
  • Sea salt (coarse)
  • Black pepper (ground)

Directions:

  1. Place the garlic, tomato paste, lemon juice, and olive oil into a medium bowl. Add the sea salt & black pepper, as desired.
  2. Arrange the potatoes and chicken evenly into a microwave-safe dish.
  3. Pour the tomato paste over the potatoes and chicken then spread evenly. Place onions over the tomato paste.

  • 1 (3-pound) whole chicken, neck and giblets removed
  • 1 lemon, quartered
  • 3 garlic cloves, halved
  • 2 fresh rosemary sprigs
  • 2 tablespoons olive oil

Directions

  1. In a small bowl, mix together the dried herbs, spices, salt, and black pepper.
  2. Stuff the chicken cavity with lemon, garlic, and rosemary sprigs.
  3. With kitchen twine, tie the chicken.
