  • Sliced Vidalia onion
  • Olive oil
  • Spinach
  • Homemade cranberry sauce
  • Carved turkey breast (you may also use deli turkey)
  • 2 slices of sourdough bread
  • 2 slices of cheese (cheddar)

It may take you about 5 minutes to prepare the ingredients and 3 minutes to cook the panini.

Instructions 

  1. First of all, you have to create your panini sandwich by setting one slice of cheese on one of the bread slices. Then add thin slices of Vidalia onion, followed by some spinach.
  2. Now add some turkey breast and another slice of the bread. Brush both sides of the sandwich lightly with olive oil.
  3. Preheat the George Foreman grill for about 5 minutes with the closed lid. And then put the sandwich on the grill and cook it for about 3 minutes. Or cook it unless the bread is nicely toasted and your cheese is melted.
  4. When it is done, remove the sandwich from the grill, open it and add a layer of cool but not cold homemade cranberry sauce. It will give you a sandwich with excellent contrast between warm and cool ingredients.

Ingredients 

  • 8 slices fresh mozzarella
  • 4 chicken breasts (raw, boneless, and skinless)
  • 4 tbsp olive oil
  • 2 Roma tomatoes sliced
  • 1 jar store-bought pesto
  • 8 fresh basil leaves
  • 1/ 4 cup Balsamic reduction
  • 1 loaf of Italian, Ciabatta, or French bread (sliced)

Ingredients for Lemon Aioli 

  • 2 tbsp lemon juice
  • Salt to taste
  • 1/ 3 cup mayonnaise
  • 1 tbsp garlic (minced)

It will take you about 40 minutes to prepare the ingredients and then 20 minutes to cook the meal.

Step: 1 Marinate the Chicken 

Put the chicken breasts, olive oil, and 2/ 3 jar of pesto in a gallon freezer bag. Mix all of them together and then put them on a plate in the fridge for half an hour or up to 8 hours.

Step: 2 Make the Lemon Aioli 

Now combine the lemon juice, salt, garlic, and mayonnaise in a medium-sized bowl unless they are well blended. Set it aside.

Step: 3 Grill the Chicken 

Preheat your grill. As the grill is hot enough, put the marinated chicken on it. Then close the lid and let it cook until it gets an internal temperature of 265 degrees F. It will take you about 5 to 8 minutes depending on the thickness of your chicken piece.

It is better to cook it to the internal temperature. Now remove it from the grill and put it on a cutting board. Clean the grill grates with the help of a damp cloth and leave. Slice the chicken into various strips.

Step: 4 Assemble the Paninis 

Set out 4 slices of the bread on a cutting board. Lay the chicken slices on the bread like one chicken breast per piece of bread, and then layer it with tomatoes, cheese, basil leaves, and drizzle with balsamic reduction.

Take 4 more slices of the bread out of the bag. And spread almost 4 tbsp of pesto on the slice of bread and then put the pesto side down onto one of the four sandwiches on the cutting board. Repeat this process with the remaining slices of the bread.

Step: 5 Grill the Paninis 

Now put the paninis on the grill, two at a time, and close the lid generously so that its top does not slide off your sandwiches. Let them grill for almost 5 minutes to get the perfect grill marks and to crisp up the bread. Remove paninis from the grill and place them on a cutting board.

Now put the other two sandwiches on the grill and gently close the lid again. At that time, slice the 2 paninis placed on the cutting board in half on the bias and set on different plates. Repeat this with the remaining 2 paninis.

Step: 6 Serving 

Your pesto panini with grilled chicken is ready, serve them with the lemon aioli. It is recommended to serve them instantly. Enjoy the meal!

Note that you can make your own balsamic reduction at home. For this. Pour 1 cup of balsamic in a medium-sized saucepan. And bring it to a boil and then lower to a simmer. Let it minimize unless it thickens. It may take almost 10 minutes and you may have about 1/ 4 cup of balsamic reduction at home.
