Things You Will Need for The Recipe:

  • White Sticky Rice (1 cup)
  • Water (2/3 cup)
  • Chopped Green Onion (1/4 cup)
  • Small Chili (as required)
  • Cooking Oil (2 tablespoons)
  • Roasted Peanuts (1/4 cup)
  • Sausage Patty (1, sliced)
  • Vegan Pate (1/4 cup)
  • Mayonnaise (As needed)
  • Pickles (As needed)

Step 1: Prepare the Pickles

You can use carrot and radish for the best pickle for the recipe. Add sliced carrot and radish in a mixing bowl and then sprinkle pinches of salt. Mix them well and let the mixture sit for 30 minutes. Now rinse the carrot and radish and transfer to a glass jar or bowl.

Now you need to prepare the brine. For this, combine white vinegar, warm water, and sugar. Stir them well until the sugar dissolve. Now pour the solution on the radish and carrots to fully cover them. After that, put the bowl in the refrigerator by covering a lid. They will be ready to use after 4 hours although you can preserve them for up to 1 week in the refrigerator.

Step 2: Cook the Sticky Rice

Begin with washing and rinsing the rice several times and. Soak them for around 4 to 10 hours or overnight. Now add one cup of water to your pressure cooker bowl. Now drain the soaked rice in a colander and place it with the rice into the bowl of the pressure cooker. Make sure that the colander is not touching the water.

Now close the lid and set the cooker on high and choose 12 minutes duration. Afterward, let the pressure release naturally for 12 minutes and then release manually. Now you can unlock the lid but left the rice until you serve them. You can also use an instant pot to cook the rice.

Step 3: Add Other Ingredients

Add two tablespoons of oil to a small saucepan and heat it on the stove. Once it becomes hot, add the green onions and saute for a few minutes. After that, take the pan off from the stove and wait a few minutes to cool. In the meantime, spread the sticky rice on a large serving plate maintaining a thickness around one inch.

Step 4: Add the Toppings

Now spread the pate and mayonnaise on the top of the rice generously. Afterward, add pickles, peanuts, sliced chili, sliced sausage, and sautéed green onions. Simply sprinkle them together or one by one.

How to Cook Xoi La Dua (Pandan Sticky Rice)

The Pandan Sticky Rice or Xoi La Dua is another well-known Xoi in Vietnamese. It is based on Pandan, an aromatic and intoxicating leaves that make the dish impressively flavorful. They are typically available in the Vietnamese and Asian super shops. Check out the instructions to cook the rice.

Things You Will Need:

  • Glutinous Rice (2 cups)
  • Pandan Leaves (8 to 12 pieces)
  • Artificial Pandan Extract (3 to 4 drops)
  • 5 c water (The one you drink)
  • Sugar (3-5 tablespoon)
  • Coconut Cream (1/2 can)
  • Salt (2 tablespoons)
  • Shredded Coconuts (As needed)
  • Sesame Seeds, Roasted (1 tablespoon)

Instructions:

Step 1: Prepare the Pandan Leaves

Rinse the Pandan leaves and cut them into smaller pieces. Blend them with filtered to crush the leaves. Based on your blender, you will require blending for around 30 to 60 seconds. After that, take them out and pour them into a small bowl. Now squeeze and strain out the pulp of the leaves. Then sprinkle some salt and pandan extract on the pandan water you have just preferred.

Step 2: Prepare the Rice

Add the Glutinous rice (also labeled as sweet rice) to a large bowl and submerge them with water. Now leave the bowl for around 4 to 12 hours to soak the rice. After that, drain the water and separate the rice. Now steam the rice for around 15 to 20 minutes or until they become comparatively clear and soft. They should be soft enough to squeeze with the pressure of your fingers.

After that add half a can of coconut cream, 3 or 4 tablespoons of sugar, and one tablespoon of salt in a small bowl. Mix them well to make the coconut sauce and pour on the rice. Mix them well for an even coat. Now put the rice on steam again for 10 to 15 minutes. The rice will be ready afterward.

Step 3: Prepare the Topping
