As you may already guessed, breading your frozen chicken breasts will be a slight issue if you tried to do it the regular way. Generally, when frying chicken, you would take it through the breading process of flour and eggs breadcrumbs. Unfortunately, if you try to do this with frozen chicken breasts the breading will just fall off.

So how do you bread your frozen chicken breasts? To get the perfect breading all you will need is some cooking oil or cooking oil spray and whatever seasoned breadcrumbs mixture you’ll be putting on the chicken. The oil here will act as a glue to hold your breading in place. Simply spray your chicken breasts thoroughly with oil. Then press your breadcrumb mixture onto the frozen chicken breast. I like to use a spoon to dump the breadcrumbs on the chicken breast. Then the back of the spoon to press it down.

Creamy Chicken, Rice and Peas

Preparation time: 10 minutes

Ingredients:

  • chicken breasts, 1 pound, skinless, boneless and cut into quarters
  • 1 cup white rice, already cooked
  • Salt and black pepper to the taste
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 1 yellow onion, chopped
  • white wine, ½ cup
  • ¼ cup heavy cream
  • chicken stock, 1 cup
  • ¼ cup parsley, chopped
  • 2 cups peas, frozen
  • 1 and ½ cups parmesan, grated

Directions:

  1. Drizzle half of the oil over them, rub well. Season chicken breasts with salt and pepper. Put in your air fryer’s basket and cook them at 360 degrees F for 6 minutes.
  2. Warm the pot with the remaining oil over medium high heat, add garlic, onion, wine, stock, salt, pepper and heavy cream, stir, bring to a simmer and cook for 9 minutes.
  3. Transfer chicken breasts to a small oven proof dish, add peas, rice and cream mix over them, toss, sprinkle parmesan and parsley all over, place in your air fryer and cook at 420 degrees F for 10 minutes.
  4. Divide among plates and serve hot.

How To Cook Chicken Breast Sandwiches In An Air fryer

  • 2 chicken breasts, skinless, boneless and cubed
  • onion, 1 red, chopped
  • ½ cup Italian seasoning
  • bell pepper, 1 red, sliced
  • ½ teaspoon thyme, dried
  • 2 cups butter lettuce, torn
  • 1 cup cherry tomatoes, halved
  • 4 pita pockets
  • 1 tablespoon olive oil

Directions:

  1. In your air fryer, mix chicken with onion, bell pepper, Italian seasoning and oil, toss and cook at 380 degrees F for 10 minutes.
  2. Transfer chicken mix to a bowl, add thyme, butter lettuce and cherry tomatoes, toss well, stuff pita pockets with this mix and serve for lunch. Enjoy!
