Ingredients Required

For the burgers

  • 2pounds Atlantic salmon, skinned and chopped
  • 4scallions, finely chopped
  • ½of a jalapeño pepper, finely diced
  • 1tablespoon fresh ginger, grated
  • 1tablespoon sesame seeds
  • 2eggs
  • juice from half a lime
  • 1tablespoon soy sauce
  • cups panko breadcrumbs

 For the topping

  • ¾cup mayonnaise
  • 1tablespoon pickled ginger, finely diced
  • 1teaspoon wasabi, more to taste
  • To serve:
  • 4 or 8hamburger or slider buns
  • curly lettuce
  • soy sauce
  • sliced cucumber

Instructions to Follow

Step 1-Prepare the topping

Place mayonnaise, pickled ginger, and wasabi into a small bowl and stir together until they are mixed. Taste, then add more wasabi if needed. Cover and refrigerate it until use.

Step 2-Prepare the burgers

Put all of the ingredients for the burgers into a medium-sized bowl and stir together. Bring the mixture together by hand and divide into either 4 x 8oz. burgers or 8 x 4oz. sliders. Place burgers onto a parchment-lined baking sheet, cover, and refrigerate for at least 30 minutes.

Step 3-Cook the burgers

Preheat barbecue to 450°F. For 4oz. sliders: place onto grill, close lid and cook for 2½ minutes. Flip and cook for an additional 2 minutes. For 8oz. burgers: place onto grill, close lid and cook for 3 minutes. Flip and cook for an additional 3 minutes.

Step 4-To serve

Place a piece of curly lettuce on each bun, then top with burgers or sliders. Brush the burger tops with soy sauce and sprinkle with sesame seeds. Add a generous dollop of the ginger-wasabi mayo and gently spread it out across the burger. Add cucumber slices, then the top of the bun. Serve immediately.

It does not depend on the method you are following, the only thing necessary is to use an instant-read thermometer to check the internal temperature. First, insert the thermometer into the thickest part of the burger. When the salmon burger reaches 145 degrees Fahrenheit, it is done. In case you do not have a thermometer then you can check that your burger is lightly crisp on the outside and that the meat inside is pink and flaky. It should not still look raw

Take two tablespoons of Greek yogurt binding the salmon patty with perfect herby Greek yogurt sauce!

Vinegar, diced herbs like parsley, dill, or cilantro along with garlic powder mixed together can make an easy, yet perfect sauce for salmon burgers that adds even more moisture.

Though tartar sauce is the sauce most people instinctively seek for fish burgers, using Greek yogurt instead of mayonnaise keeps this recipe light and bright.

Refrigerate burgers and sauce separately in an airtight storage container for up to 2 days.

To Freeze

Individually wrap cooked or uncooked burgers, and freeze them in an airtight freezer-safe storage container for up to 3 months. Let thaw overnight in the refrigerator before reheating or cooking.
