Frozen Cod Is Actually Best

The air fryer works better with frozen fish fillets that have been battered. Since the batter is thicker, your fish fillets will be as crisp as those from a deep-fat fryer at a fish and chip shop.

It tends to be healthier and lighter to use frozen fish fillets with no crunch. Breaded fish, however, might be better suited to those with a diet.

Cod Croquettes with Lemon-Dill Aioli

Prep time: 15 minutes | Cook time: 10 minutes | Serves 4

Ingredients

Croquettes:
  • ¼ cup 1% milk
  • 3 large eggs, divided
  • 12 ounces (340 g) raw cod fillet, flaked apart with two forks
  • ½ cup boxed instant mashed potatoes
  • 2 teaspoons olive oil
  • ¹⁄₃ cup chopped fresh dill
  • shallot, 1, minced
  • 1 large garlic clove, minced
  • ¾ cup plus 2 tablespoons bread crumbs, divided
  • fresh lemon juice, 1 teaspoon
  • 1 teaspoon kosher salt
  • dried thyme, ½ teaspoon
  • ¼ teaspoon freshly ground black pepper
  • Cooking spray
Lemon-Dill Aioli:
  • 5 tablespoons mayonnaise
  • Juice of ½ lemon
  • 1 tablespoon chopped fresh dill

Directions

  1. For the croquettes: In a medium bowl, lightly beat 2 of the eggs. Add the fish, milk, instant mashed potatoes, olive oil, dill, shallot, garlic, 2 tablespoons of the bread crumbs, lemon juice, salt, thyme, and pepper. Mix to thoroughly combine. Place in the refrigerator for 30 minutes.
  2. For the lemon-dill aioli: In a small bowl, combine the mayonnaise, lemon juice, and dill. Set aside.
  3. Measure out about 3½ tablespoons of the fish mixture and gently roll in your hands to form a log about 3 inches long. Repeat to make a total of 12 logs.
  4. Beat the remaining egg in a small bowl. Place the remaining ¾ cup bread crumbs in a separate bowl. Dip the croquettes in the egg, then coat in the bread crumbs, gently pressing to adhere. Place on a work surface and spray both sides with cooking spray.
  5. Preheat the air fryer to 350ºF (177ºC).
  6. In the air fryer basket, arrange a single layer of croquettes (may need to cook in batches). Cook at the corresponding preset mode or Air Fry for about 10 minutes, flipping halfway, until golden.
  7. Serve with the aioli for dipping.

Roasted Cod with Sesame Seeds

Prep time: 5 minutes | Cook time: 7 to 9 minutes | Makes 1 fillet

Ingredients

  • 1 tablespoon reduced-sodium soy sauce
  • 2 teaspoons honey
  • Cooking spray
  • 6 ounces (170 g) fresh cod fillet
  • 1 teaspoon sesame seeds

Directions

  1. In a small bowl, combine the soy sauce and honey.
  2. Spray the air fryer basket with cooking spray, then place the cod in the basket, brush with the soy mixture, and sprinkle sesame seeds on top. Roast at 360ºF (182ºC) for 7 to 9 minutes or until opaque.
  3. Remove the fish and allow to cool on a wire rack for 5 minutes before serving.
